Tomato Soup

Just a nice tomato soup.

Ingredients

  • 3 tbsp olive oil
  • 700 g tomatoes coarsely chopped
  • 200 g onion
  • 200 g garlic
  • 200 g celery
  • 1 l boiling water
  • 300 ml cream
  • 1 peperoncino
  • salt, pepper
  • flavour enhancer optional

Instructions

  • Heat the oil in a heavy-bottomed pot over medium heat.
  • Add coarsely chopped onion, garlic, and celery and sauté for 5-10 minutes, stirring regularly.
  • Add tomatoes and seasonings, simmer for 10 minutes.
  • Pour in the boiling water, simmer for 20-30 minutes over low heat.
  • Turn off the heat and strain the vegetables.
  • Return the pureed vegetables to the pot, cook for 5 more minutes, add the cream, and heat to boiling. Done.

Notes

Note: You can also add a can of white beans.
