Tomato Soup

Just a nice tomato soup.
Ingredients
- 3 tbsp olive oil
- 700 g tomatoes coarsely chopped
- 200 g onion
- 200 g garlic
- 200 g celery
- 1 l boiling water
- 300 ml cream
- 1 peperoncino
- salt, pepper
- flavour enhancer optional
Instructions
- Heat the oil in a heavy-bottomed pot over medium heat.
- Add coarsely chopped onion, garlic, and celery and sauté for 5-10 minutes, stirring regularly.
- Add tomatoes and seasonings, simmer for 10 minutes.
- Pour in the boiling water, simmer for 20-30 minutes over low heat.
- Turn off the heat and strain the vegetables.
- Return the pureed vegetables to the pot, cook for 5 more minutes, add the cream, and heat to boiling. Done.
Notes
Note: You can also add a can of white beans.
