Pork Paprikas

A nice pork paprikas that tastes great with dumplings. Real comfort food on a cold day!
Ingredients
- 600-800 g pork cut into bite-sized pieces
- 2 tbsp sunflower oil
- 1 large onion finely chopped
- 3 cloves garlic minced
- 3 tbsp paprika
- 500 ml chicken stock
- 200 ml sour cream
- 2 red peppers sliced
- Cornflour if needed
- Salt to taste
- Parsley for serving
Instructions
- In a large skillet, heat the oil over medium heat. Add the pork pieces and brown them on all sides. Remove and set aside.
- Sauté the onions until translucent, then add the garlic.
- Stir in the paprika. Add the stock and bring it to a simmer.
- Return the pork to the pan, add the pepper, cover and let simmer for at least 30 minutes, or until the pork is tender.
- Once the pork is done, mix the sour cream into the sauce. If it's too thin, thicken it with cornflour mixed with cold water. Season with salt.
- Garnish with fresh parsley.
Notes
Serve with dumplings and a green salad.
