Swabian Potato Salad

A great potato salad, so unlike the creamy ones preferred by Danes.
Ingredients
- 500 g potatoes medium-sized, firm, not floury
- 200 g cucumber sliced, salted, with the juice squeezed out
- 200 ml warm stock possibly from a cube
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- a pinch of salt and pepper
Instructions
- Cook the potatoes in their skins until tender (but not too soft).
- Peel them while they are still warm, and cut them into medium-thick slices.
- Pour the bouillon, oil, vinegar, salt, and pepper over the potatoes, add the cucumber slices, and mix everything well.
- Enjoy your Swabian Potato Salad. It's ready to serve!
