Swabian Potato Salad

A great potato salad, so unlike the creamy ones preferred by Danes.

Ingredients

  • 500 g potatoes medium-sized, firm, not floury
  • 200 g cucumber sliced, salted, with the juice squeezed out
  • 200 ml warm stock possibly from a cube
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • a pinch of salt and pepper

Instructions

  • Cook the potatoes in their skins until tender (but not too soft).
  • Peel them while they are still warm, and cut them into medium-thick slices.
  • Pour the bouillon, oil, vinegar, salt, and pepper over the potatoes, add the cucumber slices, and mix everything well.
  • Enjoy your Swabian Potato Salad. It's ready to serve!
