Swabian Potato Salad
A great potato salad, so unlike the creamy ones preferred by Danes.

Ingredients
500
g
potatoes
medium-sized, firm, not floury
200
g
cucumber
sliced, salted, with the juice squeezed out
200
ml
warm stock
possibly from a cube
3
tbsp
olive oil
1
tbsp
white wine vinegar
a pinch of salt and pepper
Instructions
Cook the potatoes in their skins until tender (but not too soft).
Peel them while they are still warm, and cut them into medium-thick slices.
Pour the bouillon, oil, vinegar, salt, and pepper over the potatoes, add the cucumber slices, and mix everything well.
Enjoy your Swabian Potato Salad. It's ready to serve!
