Yummy Cabbage

Also known as Pork Chops with Cavolo Nero. The best part of this dish is the cabbage.
Ingredients
- 700 g cavolo nero
- 4 tbsp olive oil
- 4 garlic cloves
- 4 pork loin chops
- 250 ml red wine
- 1 sprig fresh flat-leaf parsley chopped
- salt and pepper
Instructions
- Cook the cabbage in salted, boiling water for about 30-40 minutes, then drain.
- Meanwhile, heat the oil in a frying pan, add the garlic and cook until golden brown.
- Add the chops to the pan, brown them, pour in the wine and season with salt and pepper.
- Simmer over a low heat until the wine has reduced to half the original amount.
- Remove the chops from the pan and keep warm.
- Chop the cabbage roughly.
- Add the cabbage and parsley to the pan and cook over a low heat for 10 minutes.
- Return the chops to the pan and heat through for a few minutes before serving.
- Serve with bread.
