Yummy Cabbage

Also known as Pork Chops with Cavolo Nero. The best part of this dish is the cabbage.

Ingredients

  • 700 g cavolo nero
  • 4 tbsp olive oil
  • 4 garlic cloves
  • 4 pork loin chops
  • 250 ml red wine
  • 1 sprig fresh flat-leaf parsley chopped
  • salt and pepper

Instructions

  • Cook the cabbage in salted, boiling water for about 30-40 minutes, then drain.
  • Meanwhile, heat the oil in a frying pan, add the garlic and cook until golden brown.
  • Add the chops to the pan, brown them, pour in the wine and season with salt and pepper.
  • Simmer over a low heat until the wine has reduced to half the original amount.
  • Remove the chops from the pan and keep warm.
  • Chop the cabbage roughly.
  • Add the cabbage and parsley to the pan and cook over a low heat for 10 minutes.
  • Return the chops to the pan and heat through for a few minutes before serving.
  • Serve with bread.
