Wild Boar Pasta

I came up with this one day when the supermarket had reduced their wild boar mince.

Ingredients

  • 400 g wild boar mince
  • 250 ml red wine
  • 2 onions
  • 4 cloves garlic
  • 2 carrots
  • 2 peppers
  • ½ butternut squash
  • 1 box passata
  • beef stock
  • 2 tsp of rosemary
  • 1 tsp thyme
  • 1 tsp wild garlic
  • salt
  • pepper
  • 600 g pasta

Instructions

  • Stick the mince in 250ml red wine for an hour.
  • Chop and fry the onions with grated veg and garlic.
  • Add and fry the mince till brown.
  • Add beef stock and passata and simmer for an hour with the herbs, salt and pepper.
  • Serve with boiled pasta.
