Wild Boar Pasta

I came up with this one day when the supermarket had reduced their wild boar mince.
Ingredients
- 400 g wild boar mince
- 250 ml red wine
- 2 onions
- 4 cloves garlic
- 2 carrots
- 2 peppers
- ½ butternut squash
- 1 box passata
- beef stock
- 2 tsp of rosemary
- 1 tsp thyme
- 1 tsp wild garlic
- salt
- pepper
- 600 g pasta
Instructions
- Stick the mince in 250ml red wine for an hour.
- Chop and fry the onions with grated veg and garlic.
- Add and fry the mince till brown.
- Add beef stock and passata and simmer for an hour with the herbs, salt and pepper.
- Serve with boiled pasta.
