Madeira Herring

One of my famous Christmas herring recipes.
Ingredients
- 1 jar marinated herring fillets cut into pieces
- 2 tbsp concentrated tomato purée
- 4 tbsp neutral oil such as sunflower or rapeseed
- 2 tbsp balsamic vinegar
- 3 tbsp sugar
- 100 ml Madeira
Instructions
- Combine the tomato purée, oil, balsamic vinegar and sugar in a saucepan.
- Bring briefly to the boil, stirring until the sugar has dissolved.
- Remove from the heat and allow to cool completely.
- Stir in the Madeira.
- Add the herring pieces and mix gently.
- Chill before serving.
Notes
If possible, use old-fashioned herrings (gammeldags modnede sild in Danish).
