Madeira Herring
One of my famous Christmas herring recipes.

Ingredients
1
jar
marinated herring fillets
cut into pieces
2
tbsp
concentrated tomato purée
4
tbsp
neutral oil
such as sunflower or rapeseed
2
tbsp
balsamic vinegar
3
tbsp
sugar
100
ml
Madeira
Instructions
Combine the tomato purée, oil, balsamic vinegar and sugar in a saucepan.
Bring briefly to the boil, stirring until the sugar has dissolved.
Remove from the heat and allow to cool completely.
Stir in the Madeira.
Add the herring pieces and mix gently.
Chill before serving.
Notes
If possible, use old-fashioned herrings (
gammeldags modnede sild
in Danish).
