Madeira Herring

One of my famous Christmas herring recipes.

Ingredients

  • 1 jar marinated herring fillets cut into pieces
  • 2 tbsp concentrated tomato purée
  • 4 tbsp neutral oil such as sunflower or rapeseed
  • 2 tbsp balsamic vinegar
  • 3 tbsp sugar
  • 100 ml Madeira

Instructions

  • Combine the tomato purée, oil, balsamic vinegar and sugar in a saucepan.
  • Bring briefly to the boil, stirring until the sugar has dissolved.
  • Remove from the heat and allow to cool completely.
  • Stir in the Madeira.
  • Add the herring pieces and mix gently.
  • Chill before serving.

Notes

If possible, use old-fashioned herrings (gammeldags modnede sild in Danish).
