This is Idith (my grandmother)'s old recipe.
Ingredients
- 1 kg minced pork and beef
- 2 eggs
- 1 bread roll soaked in milk
- Salt and pepper
- 1 onion, chopped optional
- Bacon for covering
- Red currant juice or jelly
- Extra milk
Instructions
- Mix the meat with the eggs, breadcrumbs (or soaked roll), salt, pepper and onion.
- Shape into a loaf and cover with bacon.
- Pour over milk and a splash of redcurrant juice.
- Bake in the oven at 200°C for 1 hour.
- Strain the gravy, thicken it, add browning and season with more red currant juice or jelly to taste.
