A lovely potato dish that's particularly good with Favourite Curry.

Ingredients

  • 500 g potatoes boiled and peeled
  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds optional
  • 1 green chilli finely chopped, optional
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder adjust to taste
  • ½ tsp ground coriander
  • Salt to taste
  • ½ lemon for juicing
  • Fresh coriander leaves chopped for garnish

Instructions

  • Cut the boiled potatoes into cubes.
  • Heat the oil or ghee in a frying pan over medium heat.
  • Add cumin seeds (and mustard seeds if using). Let them sizzle for a few seconds until aromatic.
  • Add the green chilli (if using) and stir for a moment.
  • Add the turmeric, red chilli powder, ground coriander, and salt. Stir to combine.
  • Toss in the potato cubes and mix well to coat them with the spices.
  • Cook for 5-7 minutes, stirring occasionally, until the potatoes are slightly crispy on the edges.
  • Squeeze over the lemon juice and garnish with fresh coriander.
  • Serve warm alongside your rogan josh feast.
