Banana Loaf

A delicious banana loaf that tastes even better if you butter it.
Ingredients
- 12 ripe bananas approximately 2.5 kg
- 500 g all-purpose flour
- 400 g granulated sugar
- 200 g unsalted butter softened
- 4 large eggs
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp vanilla extract
- 2 tsp pearl sugar
- 1 handful chocolate chopped
Instructions
- Preheat your oven to 180°C. Grease and flour two bread tins or line them with parchment paper.
- Peel and mash the bananas in a large mixing bowl until smooth. Leave one intact for slicing on top at the end.
- Add the softened butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate.
- Divide the batter evenly between the prepared loaf pans.
- Sprinkle pearl sugar and banana slices on top.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the banana loaves to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely before slicing and serving. Enjoy your banana loaf!
