Banana Loaf

A delicious banana loaf that tastes even better if you butter it.

Ingredients

  • 12 ripe bananas approximately 2.5 kg
  • 500 g all-purpose flour
  • 400 g granulated sugar
  • 200 g unsalted butter softened
  • 4 large eggs
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 2 tsp pearl sugar
  • 1 handful chocolate chopped

Instructions

  • Preheat your oven to 180°C. Grease and flour two bread tins or line them with parchment paper.
  • Peel and mash the bananas in a large mixing bowl until smooth. Leave one intact for slicing on top at the end.
  • Add the softened butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in the chocolate.
  • Divide the batter evenly between the prepared loaf pans.
  • Sprinkle pearl sugar and banana slices on top.
  • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Allow the banana loaves to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely before slicing and serving. Enjoy your banana loaf!
