Preheat your oven to 180°C. Grease and flour two bread tins or line them with parchment paper.
Peel and mash the bananas in a large mixing bowl until smooth. Leave one intact for slicing on top at the end.
Add the softened butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Fold in the chocolate.
Divide the batter evenly between the prepared loaf pans.
Sprinkle pearl sugar and banana slices on top.
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Allow the banana loaves to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely before slicing and serving. Enjoy your banana loaf!
