Ingredients

  • 500 g macaroni
  • 125 g butter
  • 100 g all-purpose flour
  • 1 l milk
  • 300 g cheddar cheese grated (1/3 set aside for topping)
  • 100 g breadcrumbs

Instructions

  • Preheat your oven to 210 degrees Celsius.
  • Boil the macaroni in a large pot of salted water according to the package instructions, until al dente. Once cooked, drain and set aside.
  • While the pasta is boiling, melt the butter in a large saucepan. Whisk in the flour and cook for a minute to form a roux.
  • Gradually add the milk to the roux, whisking continuously to ensure a smooth sauce. Bring the mixture to a simmer and cook until it has thickened.
  • Remove the sauce from the heat and stir in 2/3 of the grated cheddar until it has fully melted into the sauce.
  • Pour the cooked and drained macaroni into a large baking dish. Pour over the cheese sauce and stir to ensure that the pasta is evenly coated.
  • Mix the remaining 1/3 of grated cheddar with the breadcrumbs and sprinkle this mixture over the top of the pasta.
  • Bake in the preheated oven for about 15 minutes, or until the top is golden and crispy.
