Ingredients
500
g
macaroni
125
g
butter
100
g
all-purpose flour
1
l
milk
300
g
cheddar cheese
grated (1/3 set aside for topping)
100
g
breadcrumbs
Instructions
Preheat your oven to 210 degrees Celsius.
Boil the macaroni in a large pot of salted water according to the package instructions, until al dente. Once cooked, drain and set aside.
While the pasta is boiling, melt the butter in a large saucepan. Whisk in the flour and cook for a minute to form a roux.
Gradually add the milk to the roux, whisking continuously to ensure a smooth sauce. Bring the mixture to a simmer and cook until it has thickened.
Remove the sauce from the heat and stir in 2/3 of the grated cheddar until it has fully melted into the sauce.
Pour the cooked and drained macaroni into a large baking dish. Pour over the cheese sauce and stir to ensure that the pasta is evenly coated.
Mix the remaining 1/3 of grated cheddar with the breadcrumbs and sprinkle this mixture over the top of the pasta.
Bake in the preheated oven for about 15 minutes, or until the top is golden and crispy.
