Spicy Cucumber Salad

This is a simple and refreshing cucumber salad with a spicy kick from Korean chilli flakes. It's a perfect side dish for any meal.

Ingredients

  • 2 cucumbers about 400g each
  • 2 tbsp Korean chilli flakes gochugaru
  • 50 ml rice vinegar
  • 50 ml light soy sauce
  • 3 garlic cloves minced
  • 2 tbsp roasted sesame seeds
  • 2 tbsp sesame oil

Instructions

  • Chop up the cucumbers into small pieces.
  • Mix the chilli flakes, rice vinegar, light soy sauce, minced garlic, roasted sesame seeds, and sesame oil in a bowl to make the sauce.
  • Add the chopped cucumber into the bowl with the sauce.
  • Mix well to ensure the cucumber pieces are well coated in the sauce, and then serve.
