Ingredients

  • 4 egg yolks
  • 1 liter tykmælk thick buttermilk or cultured milk
  • 1 liter kærnemælk regular buttermilk
  • 4 tbsp cane sugar can be replaced with regular sugar
  • 1 vanilla bean or replace 2 tablespoons of sugar with 2 tablespoons vanilla sugar
  • 1 lemon finely grated
  • For serving: fresh strawberries and kammerjunkere small sweet biscuits

Instructions

  • Prepare Vanilla and Lemon: Cut the vanilla bean in half and scrape out the seeds. Mix the vanilla seeds with a little sugar. Zest the lemon and set aside.
  • Mix Egg Yolks and Sugar: In a large bowl, whisk the egg yolks, sugar, vanilla seeds, and lemon zest together until light and fluffy using a hand mixer.
  • Add Tykmælk: While continuing to whisk, gradually add the tykmælk in 3-4 batches, mixing well with the egg mixture.
  • Add Kærnemælk and Lemon Juice: Mix in the kærnemælk, then taste and adjust with the juice from the lemon, adding gradually until the koldskål is sour enough to your liking.
  • Chill and Serve: Chill in the refrigerator and serve in bowls with fresh strawberries and kammerjunkere.
