Instructions
Prepare Vanilla and Lemon: Cut the vanilla bean in half and scrape out the seeds. Mix the vanilla seeds with a little sugar. Zest the lemon and set aside.
Mix Egg Yolks and Sugar: In a large bowl, whisk the egg yolks, sugar, vanilla seeds, and lemon zest together until light and fluffy using a hand mixer.
Add Tykmælk: While continuing to whisk, gradually add the tykmælk in 3-4 batches, mixing well with the egg mixture.
Add Kærnemælk and Lemon Juice: Mix in the kærnemælk, then taste and adjust with the juice from the lemon, adding gradually until the koldskål is sour enough to your liking.
Chill and Serve: Chill in the refrigerator and serve in bowls with fresh strawberries and kammerjunkere.
