One-Pan Mediterranean Chicken with White Beans, Veg and Orzo

Ingredients

  • 4 chicken breasts
  • 2 cans white beans drained
  • 100 g orzo or other tiny pasta
  • 2 courgettes cubed
  • 1 red pepper cubed
  • 2 onions sliced
  • 2 carrots cubed
  • 1-2 handfuls cauliflower florets cubed
  • 3-4 garlic cloves chopped
  • 2-3 tbsp olive oil
  • 500 ml hot stock veg or chicken
  • Dried herbs thyme, oregano, rosemary
  • Salt & pepper
  • lemon juice optional
  • chili flakes optional

Instructions

  • Sear chicken in olive oil (3–4 mins per side). Set aside.
  • Sauté onion, carrot, cauliflower in pan with more oil (4–5 mins).
  • Add garlic, courgette & red pepper – cook 4 mins.
  • Stir in white beans & orzo. Pour in hot stock.
  • Return chicken to pan. Cover & simmer 12–15 mins, stirring now and then, thicken with cornstarch.
  • Rest 5 mins. Add lemon if you like. Serve hot with bread!
