Fried Rice

Ingredients

  • 500 g uncooked rice
  • 2 medium onions chopped
  • 1 large courgette chopped
  • 3 medium carrots chopped
  • 2 bell peppers preferably one red, one green, chopped
  • 8 cloves garlic finely chopped
  • 1 large chorizo sliced
  • 400 g chicken breast or thigh diced (optional)
  • 400 g prawns peeled (optional)
  • Fresh chillies sliced (optional, to taste)

Seasoning

  • 2 tbsp oyster sauce
  • 2 tbsp fish sauce
  • 4 tbsp soy sauce
  • ½ tbsp ground white pepper
  • ½ tbsp MSG optional
  • Salt to taste

For serving

  • Chilli oil optional
  • 6 eggs fried (optional)
  • Spring onions sliced (optional)

Instructions

  • Cook the rice and allow it to cool completely (preferably chilled).
  • In a large pan or wok, fry the chorizo over medium heat until toasted but not crunchy. Remove and set aside.
  • In the same pan, fry the chicken and prawns (if using) in the rendered chorizo oil until cooked through. Remove and set aside.
  • Add chopped onions to the pan and cook until soft and translucent.
  • Add the carrots, courgette, garlic, and fresh chillies (if using). Fry for about 15 minutes, stirring regularly.
  • Add the bell peppers and continue to fry until they are cooked through.
  • Return the chorizo (and optional meat) to the pan and mix well.
  • Remove all vegetables and meat from the pan and set aside.
  • Add the cooled rice to the pan and fry, stirring constantly to avoid sticking.
  • Gradually stir the cooked vegetables and meat back into the rice.
  • Season with oyster sauce, fish sauce, soy sauce, white pepper, MSG (if using), and salt. Adjust to taste.
  • Serve hot, optionally topped with a fried egg, a drizzle of chilli oil, and sliced spring onions.
