Goats Cheese Chicken Tacos

delicious fre$h tacos to enjoy with your favourite hot sauce
Ingredients
- 500 g Chicken Thigh Fillets (salmon + prawns alternative)
- 8 Corn Tacos (wraps alternative)
- Pack Radish
- 1 Pineapple
- 1 Cucumber
- 1 Red Onion
- 1 Goats Cheese
- 1 Avocado
- 2 tbsp Mayonaise
- 1 Lime
- 1 Hot Sauce
- 50 ml Pickling Liquid (Apple Cider Vinegar, Citrus Juice etc.)
- 150 ml Boiling Water
- 3 tbsp Spice Mix
- 1 bunch Coriander
Instructions
- Finely slice red onion and put into pickling liquid with salt and sugar. Top up with boiling water (ratio: 3 parts boiling water, 1 part pickling juice)
- Finely slice radishes, dice cucumber and pineapple into small bitesize pieces, mix into a slaw, season with small amount of salt. Add some pickling liquid (citrus/sugar in the pineapple should do a lot of the pickling)
- Mash one avocado, mayonnaise and juice of one lime together with some salt.
- Chop chicken thighs into bitesize pieces, marinade in your spice mix of choice + salt (I'd use a mix few different spices - chipotle, cayenne, guajillo, arbol, pasilla etc.). If no spices should be fine with some salt and pepper (you'll need to bulk up on the hot sauce!)
- Put your chicken on to fry, fry until cooked through.
- As chicken cooks, start to prep your tortilla/wraps. Put wrap/tortilla on the open hob flame (be careful to not burn the house down or your wrap/tortilla). Should be about 15-30 seconds each side.
- Assembly: put one tortilla/wrap on your plate, with the back of a spoon/knife spread some goats cheese on the wrap, add your slaw, put chicken on top, add your avocado sauce, top with pickled red onions and douse with your favourite hot sauce(s). Add chopped coriander on top plus a squeeze of lime juice if you fancy. Repeat until you can't move // can't feel your face : )
